Quick and Easy Picnic Grazing Board

Most of us have been cooped up at home these days trying to stay safe and healthy. It’s been hard trying to keep sane during these times so even the tiniest activity/plan/outing makes a huge difference to your week, it energises and refreshes you. So, a few of us decided to try and go on a last-minute social distancing picnic where I offered to make a quick and easy grazing board with only ingredients I had on hand. I put this together in just 20 minutes!

What is a grazing board?

A grazing board or platter is much like a cheese platter the only difference is a grazing board has small nibbles or bite size snacks and not just cheese. You could create grazing boards for every occasion and even make them easy to carry around if you’re going on a picnic

Also, a huge plus point is easy-peasy clean up, because everything is contained on one serving dish!

Boards and Platters

Options are endless with his one, just make sure its nig enough to hold multiple nibbles and bites:

  1. Serving trays
  2. Baking trays or dishes
  3. Chopping boards

To make them look more aesthetic you could use baking paper/butter paper to lay on the tray.

Since I wanted to make it portable, I used a baking tray from m oven and covered it in baking/butter paper.

Bowls, containers and cutlery

For your cheese spreads, dips, olives and smaller nibbles you may want to add in small bowls and containers to prevent any messy situations.

Cheese knives, spreaders and toothpicks are a great way for your family and guests to pick up things.

I used plastic containers with lids for dips and things because I would be travelling with the board.

Where to begin?

You’ve got to think of the occasion you’re creating the board for! Is it a party, a picnic, a kiddie party or date night?

I pretty much keep the main food groups in mind while creating a grazing board for any occasion.

I was creating mine for a picnic, and what do people love at picnics? Sandwiches!!

That was where I began. Here is what I added to my picnic grazing board.

Finish up the décor by arranging all the activities you have planned (I’ve mentioned a few below) on your dining table or around your space you’ve picked out.

Lay out the food and drink on a table for even more décor elements and that completes your spa look!

Activities

Pedicures and manicures- set out a bunch of nail polish and have the girls pick their favourite colour. For the tub soak you could have tiny buckets and throw in some flowers.

Activities

Scary Stories- It’s a tough decision to make and also depends on the age group of your kids. I found a great book, Campfire Stories by Drake Quinn. They’re funny but still a little spooky and the plus side to this is cuddle time with the fam, yay!

Paper Bag Lanterns- For this one you could even make your own paper bag with newspaper you have left lying around the house (we are all hoarders at the end of the day). Battery operated candles are a safer bet if you have children around. Use pencils to poke a pattern on the front and back for a different look.

Art Party

Décor

Get creative with colourful paper garlands like these and put them up all around your home! Create backdrops in different areas of your living room space. Use whatever coloured paper you have at home. Click on the links below to know more!

Activities

Your goal here is to reduce clean up! So, this activity is contained to a single space but has endless options! This will keep the whole family occupied for a while.

  1. Cover the entire table with paper roll or you could even use multiple chart papers stuck together to cover your entire dining table.

  1. Add a whole bunch of art and craft materials in the center of the table like crayons, pencils, markers, paint, stickers, glue, craft supplies, cut outs etc.

6 Easy Quarantine Comfort Food Recipes

As we navigate through a Pandemic, I hope you’re safe wherever you are! I’ve included 6 easy quarantine comfort food recipes to get you started and push away those Covid blues.

With most of the world stuck at home and our favourite restaurants and street vendors closed, people are turning to their own kitchens to recreate their versions of food for their soul or comfort food. It’s one of the only things that seem to be getting us through these tough times.

I find it extremely soothing and comforting to walk into the kitchen and make myself something to eat, something that I’ve been craving, something that comforts and nourishes me.

Over the past few months my husband and I (mostly I) have tried and tested several recipes and I wanted to share some of them that have stuck with us and given us a sense of comfort that all is going to be ok in the world!

Don’t worry, I’ve got you covered on all substitute ingredients.

Chicken in milk – Jamie Oliver

My husband found this recipe online and I thought it was the weirdest thing I had ever heard, until he mentioned it was a Jamie Oliver recipe and then I acted like I never doubted him in the first place!

It’s the milk that creates a beautiful sauce and the most amazing little cheese curds. Goes perfect with some garlic bread.

“If that chicken was a woman, would you marry it?”- Jamie Oliver

Chocolate chip cookies- A Cozy Kitchen

I wanted to hop on the baking trend during quarantine so I decided to pick chocolate chip cookies because cookies make the world a better place! I’ve tried so many chocolate chip cookie recipes but they’ve either been too sweet or too dry and not chewy enough, but trust me these are the best cookies I’ve ever made. I’ve shared this recipe with friends too and it’s been a hit.

Quick Tip- This batch makes a lot of cookies! I baked only a few for us, rolled the rest of the raw dough into balls and froze them in Ziplock baggies. We had access to a quick sweet treat for many weeks!

Korean Street Toast- Seonkyoung Longest

My friends and I love Korean food and there a few good places we’ve been to in the city. However Korean street food is something that isn’t available easily in Mumbai, let me know if you know any places. One of the first recipes I made was Gilgeori-Toast which means Street toast.

Substitutes:

  • Honey Ham-I’ve used regular ham, chicken ham and even salami, it works great with either
  • American Cheese- I use any processed cheese slices (Britannia/Amul/Go Cheese)

Sheet Pan Shrimp Boil- Cravings by Chrissy Teigen

Yes Chrissy! Her recipes on this website are my go-to for any quick meal and she purely believes that “Sometimes tasty=messy” and that’s my sort of comfort food too. I loved this recipe because all you have to do besides prep is throw everything onto a baking sheet.

Substitutes

Old Bay Seasoning- you can use a spice blend of  onion and garlic powder, paprika, ground black pepper, dry mustard, ground nutmeg, crushed bay leaves and salt

Clay Pot Chicken Rice- Marion’s Kitchen

My family and friends love Asian food and it’s something we really connect over. I’ve found myself sharing a lot of Marion’s recipes with my mum and friends and it’s mainly because she gives you all the substitutes for her recipes because there are certain ingredients that are ridiculously expensive or are just not available. This pot rice was a revelation and tasted exactly like what is available at more Chinese restaurants in the city!

Substitutes:

  • Clay pot- you can use any heavy bottom pan, I actually cooked everything in a pot on the stove and transferred into my rice cooker and added more water than the required amount to get that moist consistency
  • Chicken broth- use a Maggi soup cube/ flavour cube or stock cube mixed in water
  • Soya sauce- this recipe calls for dark and light soya sauce, I just used light and it worked great
  • Mushrooms- I used dried Italian mushrooms but this recipe works great with any mushrooms
  • Chinese Sausage- use pepperoni instead or regular pork sausage

Bacon Dumpling Noodle Soup- Marion’s Kitchen

I had to add another Marion favourite! This was the perfect monsoon meal, when you crave something comforting and something that keeps the cold away. This broth only takes 15-minutes and you can toss in any veggies you like.

Substitutes:

  • Chicken broth- use a Maggi soup cube/ flavour cube or stock cube mixed in water
  • Dumplings- I added Prasuma frozen momos, you can add any frozen dumplings
  • Noodles- any that you have on hand!

That’s it from me for now guys! Hope you find your comfort food in at-least one of these 6 easy recipes till the world settles down a bit.
